IchiRyu Ramen House Executive Chef Touru De Guzman receives his Ramen Sommelier Certificate as prescribed by the International Noodle Sommelier Association, a General Incorporated Association at the Kagawa Prefecture in Japan.
The training was held at the Kagawa headquarters of the Yamato Ramen School, an institution that has been offering intensive professional ramen courses for over 20 years. Participants came from different parts of the world including students from Colombia, Mexico, Dubai, Russia, Hawaii, and Germany.
In addition, Chef Touru also completed a traditional and authentic Japanese ramen making course at the Yamato Ramen School. Before he became the Executive Chef of IchiRyu, he spent almost two decades in Japan specializing in ramen making.

“This is a testament to IchiRyu’s commitment to deliver authentic Japanese food and world-class service to its customers. It also amplifies our dedication to be the best in the ramen industry not only in the UAE but in the entire Middle East region,” said Chef Touru.
IchiRyu Ramen House is located at Wasl Port Views Building 7, Al Mina Road, Jumeirah 1, Dubai. It is the first Japanese restaurant to introduce the bocchi seki or solo dining section in the UAE. This 2025, IchiRyu is set to open its 2nd branch in Dubai Marina.
