Guevarra’s by Chef Laudico has joined forces with multi-awarded Dubai-based chef David Jezreel Lizardo Pamplona, more popularly known as Chef Dabo, for the latest chapter of “Taste of the Philippines: A Global Culinary Journey.”
The collaboration highlights Chef Dabo’s vision of bringing Filipino flavors to the world stage. As the co-founder and head chef of Naimas Café & Bistro in Dubai, he draws from 13 years of culinary experience to present a fresh take on traditional dishes.
“I mixed fine-dining techniques with authentic Filipino flavors. Diners in Dubai love something new if it’s done well, and that’s where Filipino cuisine can shine, especially when it’s honest, rooted, and executed with heart,” Chef Dabo said.
For a limited time, guests at Guevarra’s can enjoy a special menu that blends heritage and global influences. Among the standout creations are Humba-Rum Chicken Empanada, Tiyula Itum Inasal Yakitori, Bistek Saltado, and Shrimp Laing Rebosado with Coconut Wasabi Cream.
Chef Jackie Laudico welcomed the collaboration, noting that working with a Filipino chef from the Middle East brings added depth: “His food reflects his global journey, an experience shared by many Filipino chefs abroad.”
The exclusive dishes are included in Guevarra’s buffet spread, giving diners a chance to taste how Filipino cuisine is being elevated and reimagined for international recognition.
