Leaving home in search of a better life is never easy—especially when it means missing birthdays, family dinners, and quiet nights with your loved ones. For 29-year-old Oscarlito Fernandez Madregalejo, fondly called “Caloy” or “Lada,” the decision to work abroad was a leap of faith guided by his mantra, “Feel the fear and do it anyway.” Four years since taking that step, the Filipino commis chef now works at CÉ LA VI Dubai, where his journey from humble beginnings to international recognition continues to inspire many Filipinos dreaming beyond borders.
Finding purpose in the kitchen
Caloy’s love for cooking began in the Philippines, where he honed his skills through regional competitions and culinary workshops. “Before becoming a full-fledged chef, I did whatever I could to earn and learn,” he shared with TGFM. “I started by selling binalot na ulam in a small basket in our neighborhood and even sold silog meals online during the pandemic.” These early experiences, he said, taught him the values of resourcefulness, discipline, and humility—qualities that would later define his approach to work and life.


When he joined the team at CÉ LA VI Dubai, Caloy found not just a job, but a deeper sense of fulfillment. “The kitchen may be hot, noisy, and fast-paced, but I find rhythm and joy in it,” he said. “Cooking gives me life—it’s my way of expressing creativity and love. Seeing people enjoy the dishes I prepare makes all the effort worth it.”
In 2025, his passion and creativity earned him a place among the Top 3 finalists at the Hospitality Young Chef of the Year competition, held at The Address Sky View Hotel. Representing CÉ LA VI, Caloy wowed the judges with his standout dish—US Beef Tenderloin infused with Filipino and Japanese flavors. Drawing inspiration from his Bicol roots, he combined the creamy heat of Bicol Express with the smoky essence of Tinutungang Manok, finishing it off with togarashi for a bold, modern touch. “That was a big moment for me,” he said proudly. “It reminded me how far I’ve come.”
A journey of growth and sacrifice
Working abroad, Caloy admits, has been both rewarding and challenging. “Everyone wants a good life. But the real question is, what does good mean to you?” he reflected. “For me, it meant stepping out of my comfort zone. Leaving home wasn’t easy. I missed birthdays, family gatherings, quiet dinners with my wife and kids. But I knew I had to do it—to build a better future for my family, to grow personally and professionally, and to learn from diverse culinary traditions.”
Those sacrifices came with valuable lessons. “Working overseas teaches you independence, adaptability, and teamwork,” he said. “You learn to understand people from all walks of life, which makes you more patient and grateful.” Beyond the kitchen, he found another outlet that keeps him grounded—running. “Running clears my mind,” he shared. “It’s like life. You pace yourself, you endure, and you keep moving forward. Shout out to BELONG DXB Running Club!”


Despite the challenges—homesickness, pressure, and cultural adjustment—Caloy finds strength in his family. “Late-night video calls with my wife and hearing my kids’ laughter on screen, that’s what keeps me going,” he said. “They are my reason, my inspiration, and my greatest success.”
A dream that goes beyond success
For Caloy, success is not just about medals or recognition—it’s about purpose. “Being a chef isn’t just a job, it’s a calling,” he said. “Every dish I prepare carries the flavors of sacrifice, resilience, and love.” His dream is to one day return home and open his own restaurant that celebrates Filipino cuisine with a modern twist. “More than serving good food, I want to mentor young chefs and share what I’ve learned abroad,” he added. “My dream is not just personal success but to inspire others. To show that with hard work and faith, you can make it anywhere.”
To his fellow Filipinos working overseas, Caloy shares a heartfelt message: “Stay humble, work hard, and always remember your purpose. Life abroad is never easy, but if you keep your faith strong and your heart grounded, you’ll find meaning in every challenge.” He also reminds them to care for their well-being. “Find activities that keep you happy and healthy,” he advised. “Join sports, connect with good friends, and don’t forget to enjoy life even while working hard.”
