Dubai is about to get a new taste of authentic Filipino street food as Chef JP Anglo announced that isaw—grilled chicken intestine, one of the Philippines’ most iconic snacks—will now be served at Kooya Filipino Eatery in Radisson Blu Hotel, Dubai Deira Creek.
Chef Anglo, who also runs the celebrated Sarsa Kitchen in Manila, described isaw as more than just a best-seller back home. “If you really want to get to know us, this is another side of our culture, another side of our cuisine,” he said, highlighting the dish’s cultural weight as part of the everyday Filipino dining experience.
From pop-up to permanent kitchen
Kooya initially arrived in the hotel this July as a weekend pop-up at the China Club restaurant, introducing Dubai to Anglo’s bold, Filipino-forward cooking. The pop-up drew crowds eager to try inventive versions of homegrown classics such as palabok and other regional favorites.
The success of the pop-up paved the way for a more permanent setup. Starting August 1, Kooya now operates daily inside Radisson Blu Hotel, with extended hours to welcome diners:
Sunday to Thursday: 12 PM to 11 PM
Friday and Saturday: 12 PM to 12 AM
This move also marks the closing of Kooya’s Dubai Marina branch, consolidating its operations at Radisson Blu Deira Creek.
