Inasal, which means “chargrilled” or “roasted meat” in the Ilonggo dialect, hails from the City of Bacolod in the Philippines. Unlike typical barbecue or grilled chicken dishes, Bacolod inasal boasts a unique flavor profile, thanks to its distinct marinade and basting sauce. Key ingredients such as native coconut vinegar and calamansi (local lime fruit) lend the dish its signature taste and aroma, while cooking over hot charcoal imbues the meat with a delightful smokiness. The dish’s characteristic yellow hue comes from achuete or annatto oil.
The first authentic inasal in the UAE, crafted by a talented Filipino chef dedicated to capturing the dish’s true essence, is now available at the heart of Dubai. With its successful branches in Mushrif Mall’s Food Court in Abu Dhabi and Burjuman Mall’s Food Court in Dubai, Bacolod Inasal BBQ brings the flavors of home closer to the Filipino community in the Emirates.
